Low-carb Oven Baked Salmon - This is a family meal with portions to serve three adults OR two
adults and 2 children.
600 grams Salmon fillet
2 tbsp Butter
1 large Lemon or 2 small Lemons
Fresh herbs (optional) Rosemary or Sage and Parsley.
3 to 4 cups steamed Broccoli and a Green Salad of your choice.
Method: Place the salmon fillet on a sheet of baking paper and foil (note the foil is on the bottom) Cut up a few knobs of the butter and place on top. Place a few slices of lemon on the top of the fillet and squeeze lemon juice all over. Optional - fresh herbs, e.g., Rosemary sprigs or Sage leaves placed on top. Close up the tinfoil to create a parcel and place it onto a heated oven pan. (180 degrees) Leave in the oven for 10 to 15 mins.
While the Salmon is cooking prepare a Green Salad. Steam the Broccoli to slightly tender and serve. When cooked place the Salmon parcel directly on a serving dish.
